냉면 – naengmyun

냉면 is a cold noodle dish. The noodles are made from buckwheat, sweet potato, and other ingredients. When you go to a 냉면 restaurant, there’s usually two choices: 물 meaning water-based, as in a vinegary-broth, or 비빔 meaning a spicy mix. The guys in the photo above are conducting a survey on which type of 냉면 people like.
In terms of word roots, 냉 means ‘cool/cold/icy’ and 면 means noodle.
In North Korea, 냉면 is more commonly called 랭면 – and, actually, the dish is commonly associated with the North.
